Domaine du Castel is an Estate West of Jerusalem at an altitude of 2400ft. The vineyards are planted at a density of 6700 vines per hectare and produce very small yields. The grapes were handpicked and the must was barrel fermented and aged 12 months on its lees in French oak.

Winemaker's Note
Made of 100% Chardonnay. Aged for 12 months in French oak barrels, the aroma is fruity with a hint of roasted almonds. The palate is complex and round with plenty of yellow tropical fruit and citrus. It is very well balanced and mouth coating.

This white is the most wonderful accompaniment to lighter food. Refreshing and yet flavorful, C feels much more old world than a lot of the other whites coming out of Israel. This is truly the best Israeli Chardonnay I have ever had. Highly recommended.

Delicious! Best kosher white wine I've had and excellent by any standard. On par with Far Niente Chardonnay less most of the oak which was not missed. Well-balanced, slightly sweet, slightly honey flavor. This is neither a light-and-airy wine, nor strong and heavy. Well-deserved high point ratings. Total hit at an oenophile kosher Thanksgiving. Even the strictly red wine drinkers were extremely complimentary. Its breeding showed through.

A full-bodied, yet very balanced white. This wine is up there with the best French Chablis', and will complement almost any meal very well. Worth every penny.

Tried after over a year in the cellar. This is a different wine. The same aromas linger but now the palate is much more complex with the yeast flavors blending with the fruit more harmoniously. The richness of the oak provides an enjoyable texture. Hunt down properly stored 2003s!

Still the best Israeli white I've ever tasted, by a very wide margin. Crisp, with the perfect balance of fruit / oak. Expensive, yes, but worth every penny.

This is an excellent bottle of wine, very much reminiscent of the great white wines of Burgundy. Beautiful color, nice fruit and acidity, with a nice finish to boot. Not too oaky, letting the fruit really shine. Highly recommended.

I tried this bottle after it got 90 something points from Wine Spectator. It was a little lighter than I thought it would be, but their whites improve with age (oak doesn't die, however). I put a few away and hope to be pleasantly surprised.

When you pay premium prices for a wine you should get premium quality. This is a fruity wine which omits the heavy oak seen in many California Chards. We drank it for yontiff and my wife did not quibble with me about the price after tasting it. I would buy it again

A well-rounded wine, with great taste. This will complement chicken, as well as blander-tasting fish dishes. Smooth, though curiously light-bodied for a chardonnay...
