General Information
Tio Pepe is the world's best-selling Fino, uncompromisingly dry, always served cold from the fridge, always kept and served just like a white wine. Drunk, once opened, within 4 or 5 days, and fantastic with food - especially savoury nibbles like olives, nuts, and bread and oil. Great with fish.
From Jerez in southern Spain, drunk by the locals in Jerez with tapas as they've done for over a century.
In 1835 in Jerez, Spain, Manuel Maria Gonzalez, an ambitious 23 year old, set up the first manifestation of the company that was ultimately to become Gonzalez Byass. Young Manuel was mentored in this by his uncle, José Angel de la Pena, (affectionately known as Pepe), already a renowned authority on sherry and its production. It was natural therefore that in 1837 Manuel should give the first, tiny bodega (cellar) over to his uncle so that the older man could potter away at his passion to create a delicate sherry to his own, personal taste. (At the time dry, Fino sherries were enjoyed only by a very few locals in Jerez). Later, Manuel sent a couple of barrels of his uncle's new, dry wine over to his London agent, one Robert Byass. The future company partner was sceptical: "We shall see what can be done with the very, very pale wine that you so highly recommend". But the beautifully dry taste of José Angel's wine proved a great success and in 1849 Manuel named what is now the world's best-selling Fino after its creator, (tio being Spanish for uncle) - TIO PEPE.

I lived outside of Madrid for 3 1/2 years and Tio Pepe was by far my favorite of the "Finos". To be able to buy it Kosher is wonderful - never saw it Kosher in Spain. It is a superbly perfectly dry Sherry, great with "tapas". Enjoy ... David

After too many unhappy experiences with martinis made from the only kosher brand of vermouth that is available here in the U.S., I started using Tio Pepe Sherry instead. It is a major improvement! I'll never go back to other stuff.

I have never had the fino type of sherry, and was very curious to try. Did not disappoint. It's a crisp, bone-dry white, with an extra kick of flavor.

Having lived in Majadahonda, España outside of Madrid for 3 1/2 years, I became a big fan of Fino. When I found a kosher Tio Pepe at kosherwine.com, I was ecstatic. It has always been my favorite dry sherry. I prefer to sip it with tapas; but I have had it as a meal wine with Spaniards. Enjoy!

I had been searching for a genuine kosher sherry for years. Not the sweet stuff from upstate New York, but something authentic from Jerez. This sherry is the answer. It is dry, very aromatic and is great as an apertif. Try it, you will like it!

This intensely flavorful sherry is just wonderful. But if you are looking for a sweet syrupy wine when you pick up a bottle of sherry, then this in not the sherry for you. This light bodied extraordinarily dry wine has a wonderfully earthy bouquet, and complex flavors of almonds, pears, apples, key limes, and mangos. This sherry is very well structured, with a nice level of acid, and a truly desiccated finish. I find that this sherry makes a wonderful aperitif, but dry sherry is probably a bit of an acquired taste. Because the wine is fortified, it can last for up to a month after it’s been open. Keep it in you refrigerator, and serve well chilled.

This bright, very pale straw colored light white wine exhibits brilliant aromas of bread/yeast, straw, green olives, almonds, fruit, and brine. The flavors of this very dry wine are an immensely pleasurable mixture of almonds, walnuts, fruits, olive oil, salty crackers, and Granny Smith apples. Tio Pepe has a lovely long and smooth finish that is bone-dry, refreshing, a little tangy, and a tad herbaceous. It is an excellent aperitif, seriously wets the appetite, and is my preferred wine to serve between fish and meat on Shabbos. Not for all tastes, but an excellent and enjoyable wine. Should be drunk young and well chilled -- keep it in the fridge and drink it up within a week or so after opening.
