Tabor Winery: For The Love Of Wine & Nature

Established in 1999 by 4 experienced vineyard families, Tabor Winery is located in the north of Israel in the Upper Galilee region. Thanks to its creativity and constant desire to produce quality, affordable wine, Tabor has made a mark in the kosher wine world. With a commitment to crafting fine wines and doing so while being ecologically conscious, Tabor is now one of Israel’s leading and innovative wineries. Perhaps what lies behind the winery’s success is their recipe for making wine that stems from a true love of the land and nature.

Settled in the Galilee Mountains, a region long considered to be one of Israel’s most productive winemaking zones, Tabor sources its grapes from vineyards all across Israel - North to South - allowing them to enjoy a variety of climates and soils and in turn giving the winery the ability to create an extensive list of diverse wines. Did you know? All of Tabor’s vineyards are ecological-based, consisting of various ecological actions aimed at restoring nature.

 

 

Ecological Winemaking

At Tabor, winemaking is more than just a profession. Each vineyard is carefully tended to with love and attention. What is astonishing is that all wine produced by Tabor is made from grapes grown on over 495 acres of ecological vineyards. Throughout the winemaking process, the winery reduces the use of fertilizers and pesticides, instead choosing to implement eco-friendly pest control methods.

Have you noticed the owl symbol on most of their wine bottles? It represents their commitment to better the environment. How? By constructing nesting compartments for predatory birds and to increase the animal variety in the area, as well as putting every effort possible to minimize soil erosion.

 

 

The Tabor Wine Portfolio

1. Tabor Har/Mount Tabor

One of the more popular series at Tabor Winery, the Har series lives up to its reputation with a diverse selection of wines  –  smooth, full-bodied and gentle flavors, adventuresome, and overflowing with personality. For the reds, the Cabernet Sauvignon is a great choice - a wine that exudes bold juicy fruit, with delicate green hints and just the right amount of oak. For wine drinkers who like a more fruit-forward palate, the Merlot is a full-bodied wine bursting with aromas of red fruits and subtle chocolate notes on the finish. The Shiraz is a smart choice if you like a little bit of oak, spice and cherries on the palate.

Chardonnay is one of the world’s most popular grapes, and Tabor did a beautiful job in crafting a wine that is truly representative of the varietal, a refreshing and powerful wine that is just bursting with melon, peach, and starfruit aromas. 

If you’re looking for an easy-drinking wine, the Mt. Tabor Rosé made from 100% Cabernet Sauvignon grapes is crisp and semi-sweet, where you’ll discover a wonderful world of fresh berries and melon on the nose and palate. The wine is well balanced with medium acidity, and while short, a finish that is quite enjoyable. 

2. Adama

The Adama series offers a variety of rich, full-bodied red wines and crisp and aromatic whites that are sure to please everyone’s palate - whether simple or sophisticated.

One of the most well-known Adama wines from Tabor is the crisp and light Sauvignon Blanc, grown in the limestone-rich soils of the Kfar Tabor vineyard, resulting in the production of a wine that exudes beautiful flavors of citrus and stone fruit. Continuing with the whites, the Roussanne is an aromatic, refreshing, and powerful wine that is bursting with fresh citrus and ripe tropical fruits.

The red wines from the Adama series are rich in flavor, body, and also happen to be very well priced, something that is pleasantly surprising considering the high quality of these wines! Crafted from 100% Cabernet Sauvignon grapes, the Adama CS is beautifully balanced with notes of blackberries, plum, vanilla and oak; flavors that result from aging the wine in oak barrels before bottling.

Rosé is definitely the trend these days, and the Rosé Barbera does not disappoint! The wild aromas of ripe strawberries and white peach complement the light and refreshing body of the wine wonderfully, making this wine enjoyable for the warmer days by the beach or with a meal. 

3. Adama II - Premium Series

The more upscale series of the original Adama, these wines are truly unique in every way. The grapes used for these wines are harvested from the best of their vineyards, offering a remarkable drinking experience - one that is stimulating, lively, and powerful. Discover the elegant and velvety Raam Thunder, a mesmerizing blend of Shiraz and Cabernet Sauvignon that will surprise you in unexpected and amazing ways. Crafted from Petite Sirah and Cabernet Sauvignon grapes, Sufa is a special blend that will take you by storm with its intense yet pleasant flavors and feelings. 

4. Limited Edition

Tabor’s Limited Edition Cabernet Sauvignon is made exclusively from one special vineyard grown on Mount Malka in the Upper Galilee. This complex, well balanced and full-bodied wine exhibits aromas of forest fruits and cassis with hints of caramel, oak and Mediterranean herbs. Its velvety, smooth and robust tannins contribute to the structure of the wine, leading to a wonderful, juicy enduring finish. 

5. Tabor Milkiya

Aged for 24 months in French oak barrels, the Tabor Single Vineyard Malkiya is the winery’s flagship wine. Produced from 100% Cabernet Sauvignon, the grapes used in the wine are sourced and hand-picked from a single vineyard in the Upper Galilee’s Mount Malkiya. Well balanced and smooth in texture, the wine exhibits seductive aromas of dark red berries, oak, and vanilla. 6. Tabor Single Vineyard Tannat

Last but definitely not least, the Tabor Single Vineyard Tannat is truly spectacular. Planted in 2009, the Tannat vineyard was the first of its kind to be planted in Israel. This full-bodied wine is bold, rich and fruit-forward. With notes of red fruit, tobacco and coffee on the palate and finish, this well-balanced wine has firm acidity and tannins.
