La Fille du Boucher Wines: Authentically Parisian

By Dr. Kenneth Friedman

Created as the house wines for the trendy Paris restaurant, The Butcher’s Daughter wines are named after the famous kosher restaurant, La Fille du Boucher.

“The Butcher’s Daughter is first and foremost a story about family, about love, and about passion for good food and wine,” says Bryan Levy, CEO of Victor Wines. “The Butcher’s Daughter is about our Jewish French culture and our heritage.”

After spending 12 years in the kosher meat business in France, Bryan Levy has led his family’s legacy of kosher business in France into the 21st century. Joining his father, Freddy Levy, the founder of Victor Wines, Bryan has brought his leadership, enthusiasm for hard work, and fresh insight when it comes to kosher business.

“We have been in the kosher industry for generations,” says Bryan, “specializing in kosher meat wholesale. Victor Levy, my grandfather, was the founder of our group, ‘Berbeche,’ and the first to open a kosher butcher shop in Paris after his family came from Tunisia in the 1950s.” The family’s history and stature is well-established. “We are proud to have opened the very first kosher fast food in Paris in the 1970s,” says Bryan, “and to be the first company to produce processed meats and the first frozen patties in France. Our goal has always been to offer the best quality in meat or wine to the Jewish community in the most accessible way.”

With 40 years of experience in the kosher business world, Freddy Levy has been a major player in the meat industry in France, leading to his founding Victor Wines in the United States to bring the same values of quality and excellence to the kosher wine business.

After opening several butcher shops and steakhouses in Paris, the “very thin line between meat and wine” led to the production of The Butcher’s Daughter lines of wines. Every wine has been meticulously selected in the best terroirs of France, to offer the perfect pairing for each type of meat served by the family. Bryan calls these perfect pairings “The Tour de France of the best food and wine pairings,” and the increasing popularity of The Butcher’s Daughter wines proved this point. “It got quickly popular, especially with our American customers at the restaurants, so this is why we decided to introduce our wines to the American market,” says Bryan.

The restaurant, La Fille du Boucher, has been operated by Bryan’s sister Jessy Giami Levy and her husband Nicolas since 2010, just recently celebrating over a decade in business. Jessy grew up in the authentic and quintessentially Parisian 17th District of Paris, and the restaurant carries this genuine feel. Jessy explains why her restaurant carries such an interesting name, saying, “When I opened [the restaurant] with my husband, the name "La Fille du Boucher" was obvious, as my father and his father before him were the well-known kosher butchers in Paris.”

“La Fille du Boucher was also my nickname during all of my childhood and there’s no need to say that I hated it!” exclaims Jessy. “After a few years, my father, owner of the [American wine importer] Victor Wines decided to promote a new range of Bordeaux wines,” said Jessy.

As for the restaurant, La Fille du Boucher is a destination when visiting Paris, excelling as “a real revolution is the Jewish community, quickly becoming the place to go for people wishing to eat exceptional meat in an authentic French brasserie.” Even in the past year, La Fille du Boucher has again renewed itself in the face of the change of the restaurant landscape, becoming more of a “street food restaurant.”

Bryan has been working hard on a new concept of butcher shop/restaurant in Juan-les-Pins (French Riviera) modeled after the Paris-based Chez Victor Berbeche, continuing and growing the family’s conceptual line of businesses related to the kosher industry, and specializing in wholesale kosher meat, butchers shops and restaurants.
