This truly singular dessert wine is a 100% estate Gewürztraminer produced from Sheldrake Point’s estate vineyard on the shores of Cayuga Lake. Due to the exceedingly difficult and unique factors required to produce an Ice Wine, bottlings are exceedingly rare and only 70 cases were produced. Instead of harvesting as usual in the fall, the grapes were allowed to freeze on the vine through the winter months. They were then picked and pressed while still frozen to allow for the extraction of super concentrated grape must in tiny amounts. Following a cool and very slow fermentation, the results are nothing short of amazing: a nose of orange blossom, ripe peach, passionfruit, and ginger. Tropical fruit and ginger notes continue on the palate, with warm baking spices, mango, dried apricots, toffee, and caramel. The unctuous mouthfeel leads to a lingering finish of vanilla and overflowing with tropical fruit.
