Aged 8 months in oak barrels, this wine is 83% Chardonnay Cabernet and 17% Cabernet Sauvignon. It is immediately harvested by hand in the early hours of the morning, and these Chardonnay grapes are quickly separated and squeezed, maintaining cool temperatures. The clusters of Cabernet Sauvignon were squeeze whole using a special process to produce almost colorless grape juice destined to become white wine. The wine reaches its peak about two years after harvesting and will continue to develop for three more years under suitable conditions. This wine combines well with fish dishes, cream-based sauces, rich vegetable dishes and Brie or Camembert-style cheese.
