Flam Reserve Cabernet Sauvignon - Library Wines Collection 2017

Description

The Cabernet Reserve is a blend of 85% Cabernet Sauvignon, 9% Merlot, 3% Petit Verdot, and 3% Cabernet Franc sourced from our very best of plots in the Dishon & Ben-Zimra vineyards (Upper Galilee) and Mata (Judean Hills). The Cabernet Reserve was aged in French oak barrels of which 60% are new at the rest one to two years old. Each varietal ages separately for 16 months, after which the final blend takes place.After bottling the wine is aged for an additional 10 months in our cellars. Soft ripe fruit on the nose complimented by elegant oak spice and a hint of minerality. The palate is generous and balanced with ripe fruit, soft spice and a good tannic structure. The Finish is mineral, complex and long. This wine matches well with a lamb shoulder marinated with rosemary, thyme, and hibiscus.

While the wine inside this bottle has aged gracefully, the same can not be said for the labels. Both front and back labels have a tendency to fade, peel and change color over time.
