The ‘Hark Angel’ comes from Australia’s only fully-kosher winery. The name of this bottle is a reference to the organ donor who saved the lives of seven people, including Ritchie Harkham. Ritchie calls this person his “Hark Angel”, and to honor this person, Harkham donates proceeds from the sale of this wine to help build schools in developing countries. To date, Hark Angel has donated 9 schools, supporting the educations of over 2000 children.
The winemaking is rather straightforward. Hand harvested fruit was de-stemmed then placed in stainless steel tanks for primary (spontaneous) fermentation. After racking to French oak, the wine underwent spontaneous malolactic fermentation and rested for 9 months. The wine was racked back to tank, and then bottled without fining, filtering, or sulfur.
