Adumim is a rich, spicy and complex fusion of Carignan, Syrah and Argaman. Each component is aged separately for 14 to 16 months in 50% new oak before being blended and spending another two months in oak in order for the varieties to harmonize. The wine is dark ruby in color and has a bouquet of black cherry, lavender and juniper berry. It offers pleasure from the first sip through the fruit filled, smoky finish, with velvety tannins and flavors of cassis, black plum, espresso, chocolate and a hint of green pepper.
