The 2019 Pasco Project Cabernet combines grapes from vineyards in 2 different appellations with similar geological topographical climatic characteristics. The vineyards overlay beds of limestone that naturally yield moderate crops. The resulting wine has a classical "European" mouthfeel and length. The 2019 vintage cabernet presents classic characteristics; hints of tobacco and ripe olive scents with spicy notes from 9 months aging in oak barrels give way to the elegant black plum fruit on the palate. Enjoyable at release, the wine will continue to gain complexity, smoother mid-palate flavors, and a longer after taste with extended bottle aging.
