How to Make Red Wine Vinegar With Leftover Red Wine

Red wine vinegar is a common kitchen staple, known for its tangy flavor that can elevate any culinary creation. If you're interested in learning how to make wine vinegar from leftover wine, you're in the right place! Here's a simple step-by-step guide to making red wine vinegar using kosher red wine.

Ingredients

  • 2 cups of kosher red wine (whatever you have left over will work!)
  • 1 cup of water
  • 1 tablespoon of vinegar with the "mother" (unfiltered and unpasteurized vinegar). You can use a pre-done red-wine vinegar or apple cider vinegar.
The 'mother,' scientifically known as Mycoderma aceti, is a type of bacteria that plays a vital role in speeding up the fermentation process. This live starter is responsible for converting alcohol into acetic acid, resulting in the creation of vinegar.

  • A cloth or paper towel
  • A rubber band or string

  1. Mix the Wine and Water: Combine the red wine and water in your container. Make sure that the container is dry and clean before use.
  2. Add the "Mother": Stir in the tablespoon of red wine vinegar with the "mother." This will act as a starter culture to begin the fermentation process.
  3. Cover the Container: Place the cloth or paper towel over the opening of the container and secure it with a rubber band or string. This allows airflow while keeping out any unwanted debris.
  4. Store the Container: Place the container in a warm, dark place where it won't be disturbed. Storing in a pantry or cupboard is ideal.
  5. Wait and Monitor: Allow the mixture to ferment for about 2 to 3 weeks. You may notice a change in aroma and appearance as the vinegar develops.
  6. Taste Test: After 2 weeks, begin tasting the vinegar to check for the desired acidity. If it needs more time, continue to monitor it every few days.
  7. Strain and Store: Once you achieve the flavor you desire, strain the vinegar into a clean bottle, discarding any solid residues.
  8. Seal the bottle, and your homemade red wine vinegar is ready to use!
