7-Course Wine & Food Pairing With Chef Yossi Backman & Brad
Up and coming Kosher chef, Yossel Backman, came to us with a delicious 7-course menu for a private event. Yossel is the Executive Chef and Owner of YB Events & Co. From his mother's kitchen to world-renowned culinary establishments, his experience in fine dining and hospitality has led him on a journey through Michelin starred restaurants to exclusive private events, anytime anywhere!
Our in-house wine expert Brad du Plessis put together some great wine recommendations to accompany every dish meticulously prepared by Yossel, and the result is truly a feast for the eyes. Let's dive in and taste through these exquisite pairings.
WINE PAIRING
Jezreel Pet Nat Sparkling Rosé 2019
This wine is bottled before primary fermentation is complete, this creates the light sparkle and means that the wine still contains some leftover yeast. These bread notes will pair with the fresh brioche while the fresh fruit aromas will interplay nicely with the savory flavors in the tofu.

Koenig Riesling 2017
This mineral-driven, high acid Alsatian Riesling will cut through the fattiness of the Kampachi while complimenting the salinity of the roe. The golden color, subtle stone fruit, and floral undertones will accentuate the honey notes in the dish.

De La Rosa Lev St. Laurent 2016 (Organic)
This St. Laurent (Zank Low-rent) has subtle earthy undertones that will accentuate the savory, smoky accompaniments. This lighter-bodied red won’t overpower the tartare while the fruit and lower tannins will counterbalance the spicy harissa. This wine has no added sulfites.

Gito Uphaz 2017
This blend of Semillon and Sauv Blanc is aged on it lees for 4 months which really underscores the minerality of this wine. The fresh fruit and acidity are a perfect pairing for the pickled and fruity flavors running through this dish.

This powerhouse of a wine with its stewed dark fruit notes and edge of sweet vanilla will interplay with the umami flavors of the dish and gamey notes of the duck.
